In 2025, we sold out of many of our wines and to ensure that we can supply all our valuable clients, we are moving to an allocation method.

We recommend getting your allocations in early, as cannot guarantee we will have enough stock for allocations.

Evolve NV - New Release

90% Chardonnay, 10% Pinot Noir.
Aromas of lime and fresh citrus, opening up to a palate of melon, grapefruit, and a nuanced hint of apricot stone.
Lees Aging: 4 years
Dosage: 4g/L (Extra Brut), keeping the finish crisp and dry.
Recently disgorged to maintain maximum freshness.

Windsor 2022 - New release

96% Chardonnay, 4% Pinot Noir.
Highly aromatic with scented jasmine and lemongrass. The palate is lush, featuring honey dew melon and red apple, finishing with a distinct note of lemon sherbet.
Lees Aging: 3 years.
Dosage: 6g/L. The highest dosage in this selection, which beautifully balances the tart lime and citrus zest.

Grande Dame Syme 2014 - Rated 95/100 Candice Chow

85% Chardonnay, 15% Pinot Noir.
The primary fruit has evolved into notes of dried apricot, lemon preserve, and grapefruit zest, with a floral lift of lilac. It has developed deep autolytic complexity: brown butter, biscuit, and rich brioche.
